Ever have one of those nights where you just want something comforting, but you can’t bear the thought of a messy kitchen? Yeah, same here. I was totally craving cheesy goodness but didn’t want to spend hours cleaning afterwards. So, I threw together this one-pan cheesy chicken and broccoli bake, and wow, it hit the spot!
I’ll admit, I almost forgot to season the chicken because I was too eager to dig in. But thankfully, it still turned out delicious! The best part? It’s all baked in one pan, so cleanup is a breeze. The gooey cheese covering the tender chicken and crunchy broccoli is just what you need after a long day.
Ingredients
2 cups broccoli florets
1 pound chicken breast, cut into bite-sized pieces
1 cup shredded cheddar cheese
1 cup cooked rice
1 can cream of chicken soup
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
How to Make It
Preheat your oven to 375°F (190°C).
In a large mixing bowl, combine the cooked rice, cream of chicken soup, garlic powder, onion powder, salt, and pepper.
Add the chicken pieces and broccoli florets to the bowl and stir until everything is well coated.
Transfer the mixture to a greased baking pan and spread it out evenly.
Sprinkle the shredded cheddar cheese on top.
Bake in the preheated oven for about 25-30 minutes, or until the chicken is cooked through and the cheese is bubbly.
Serve
Serve it straight from the pan for that cozy, homey feel. Just scoop it onto plates and enjoy the cheesy, comforting goodness!
